As a side note, I really struggled with how best to convey this sentence fragment, including whether or not to add a comma, period, stars, the word “me”. I’d actually be curious to hear people’s preference.

Since the response has the "we", I don't think you need the "me", but if you have the "me" you need the comma :-)
