considering Wikimedia got Wikiversity, the education related project...I'd say using Wikimedia's etherpad is fair game.
Now I don't know how many users it can handle.
If you intend to access it from the same IP address maybe you'll run into problems, I don't know so one alternative is to use ie. Tor Browser so IPs don't matter anymore.

How crawlers impact the operations of the #Wikimedia projects
Web crawlers collecting training data for #AI models are overwhelming #Wikipedia's infrastructure, with bot traffic growing exponentially since early 2024, according to the #WikimediaFoundation. According to data released April 1, bandwidth for multimedia content has surged 50% since January, primarily from automated programs scraping #WikimediaCommons' 144 million openly licensed media files.
